Vathal / fryums is all-time favorite for all age group, It can be used as a snack or side dish. There are many variety of Papad used to make by people in India. In our home we use to make different varieties of Vathal / Fryums during summer in kilos and store it well so that we use them till next Summer.
In this post am good to share a simple & traditional recipe of Muruku Vathal / Twisted Fryums.
Ingredients
Raw Rice - 1kg
Sago / Javaarusi - 125grms
Cumin seeds / Jeeragam - 2 tablespoons
Asafoetida / Perungayam - 1 tablespoon
Salt - As required
Green chilli - As per taste.
Procedure
Soak Sago until it become soft.
Soak Rice for half an hour or before you start the process.
Grind the grind chillies into paste.
In a heavy bottom pot 2 litres of water, add smoked sago in the boiling water
Stir it occasionally.
Cook till the sago it become glassy.
Now add the soaked rice in to it.
Add more water if its required, make sure the water level needs to be ½ inch from rice.
Add required salt.
Allow the rice cook completely.
Once rice cooked well and started getting mushy add grounded green chilly paste and mix it well.
Allow the it to cook for a minute, the consistency needs to like pongal.
Now add in the Jeera seeds & Perungayam and mix it very well.
Now switch off the stove and allow the mixture to cool.
We usually cook this mixture in the night and make the Fryums next day early morning.
To put the Fryums take a clean Muslin or nylon cloth or plastic sheet l.
Take the Muruku kozhal & add the mixture into it and squeeze it in the required shape.
Allow it to dry for a day.
Sprinkle some water on the other side of the cloth and peel the Vathal from the cloth. It will be very easy to take out if we sprinkle water.
Once again dry the peeled Vathal completely in the Sun.
When you broke the dried Vathal it should cracked easily.
Store the Vathal in a air tight container.
Deep fry the Vathal in hot oil.
Tips - Always fry the Fryums once the oil is hot.
Try adding garlic paste in the mixture, add it along with green chillies.
Try adding onion paste, add it in the last after we take out the mixture from the heat and mix it. It will get cooked in the heat of the mixture.
